Ingredients
Baby corn– 1 cup
Corn flour – 2 tbsp
Plain flour – 1 tsp
Green bell peppers, thinly sliced - 2
Spring Onion (Bulb & Greens), finely chopped with the bulb and leaves kept separate – 7
Green Chilies, finely chopped – 3
Garlic cloves – 3
Ginger – 1 inch
Red Chilli sauce , (or any other red chilli sauce) – 1 tbsp
Sweet and Spicy Red Chilli Sauce (Tomato Chilli Sauce) , (or tomato ketchup) – 1 tbsp
Dark soy sauce – 1 tbsp
Vinegar – 1 tsp
Black paper powder – 1/2 tbsp
Sugar – 1/2 tsp
Salt – 1 tsp
Spring Onion Greens, - chopped, for garnish
Steps
- Wash baby corn and cut into pieces.Make a thick or thin batter using corn flour, plain flour, salt and black paper powder.
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the manual Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
- Add 1 cup oil to the inner cooking pot and let it heat a bit. Once oil is hot dip the baby corn into batter and fry it until they change to golden and crisp.
- Once done press cancel button and set them aside. Now remove extra oil and switch to saute mode.
- Add oil to the pot and once hot add ginger, garlic, green chilli and saute til it turns fragrant.
- Next add onion, white part of spring onion and saute for 2-3 min. Then add bell peppers and saute for 2-3 min (no need to overcook this)
- Add soya sauce, chilli sauce, sugar, tomato sauce, vinegar, salt, paper powder one by one and cook for 2 min.
- Then add baby corn and saute on high heat until the baby corn gets well coated with all the sauces. Stir fry for 3 to 4 minutes and finally add spring onions.. Switch to Keep warm or Off mode.
- Saucy Baby corn Manchurian is ready to serve
