Ingredients:
For powder masala
Peanut – 2tbsp
Coriander seeds – 1tsp
Jeera – 1tsp
Sombu – 1/2tsp
Methi -1/4tsp
Chili powder – 1tsp
Turmeric powder -1/2tsp
Aamchur powder – 1tsp
Salt – 1tsp
For gravy
Oil- 3tbsp
Jeera -1tsp
Bay leaf -1
Asafoedita- 1/2tsp
Onion – 1cup
Ginger garlic paste -1tsp
Turmeric powder – 1/2tsp
Chilli powder – 1/2tsp
Garam masala powder – 1/2tsp
Tomato [uree – 1cup
Brinjal – 1/2kg
Salt – as required
Coriander leaves - 1 cup
Slit the brinjal into ¼ and soak it in water , keep aside.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add peanut, coriander seeds, jeera, sombu, methi, chili powder, turmeric powder, aamchur powder, salt to the inner cooking pot and dry roast it very level.
Allow to cool and make powder .Stuff the powdered masala into slit brinjal. Stuff the brinjal with the powdered masala. Clean the pot and oil to the pot.
Saute the stuffed brinjal for 3 mins and remove from the pot. In the same oil add jeera, bay leaf, asafoetida, onion, ginger garlic paste, turmeric powder, chilli powder, garam masala powder and sauté well.
Next add tomato puree and cook for 10 minutes. Then add fried brinjal and cook for few more minutes. Stir well. Finally add coriander leaves.
Serve hot with parota / chappathis / appam
