Carrot Phirni

Basmathi rice – 1/4cup
Milk – 1 lit
Carrot – 200 gm
Cashew nuts – 50 gm
Raisins – 50 gm
Sugar – 1 cup
Soak the rice for ½ an hour and strain the water. Allow it to dry for 15 minutes. Once dried grind into coarse powder.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add carrot to the inner cooking pot with water and allow it to boil. Once the carrots are boiled press cancel and remove. Grind to a paste using a blender.
Clean the pot and press saute. Add milk and Allow to boil. Once it comes to boil, add rice and cook till the rice turns soft. Next add carrot, mix well. Open cook for few minutes and stir in between.
Finally add sugar and fried nuts. Cook for few more minutes. Further add little ghee and stir well. Once you get the desired consistency. Switch to keep warm or off mode.
Serve it carrot phirni as a dessert.
