Chicken yakhni pulav

FOR YAKHNI –
Chicken pieces – 1 kg
Potato – 2
Ginger – 1 inch (sliced)
Cloves – 10
Onion – 1
Cumin seeds– 1 ½ tsp
Coriander seeds – 1 ½ tsp
Fennel seeds – 1 ½ tsp
Bay leaves – 2
Cardamoms – 4
Cinnamon sticks – 2
Black peppercorn – 1 tsp
Star anise – 1
Black cardamom – 1
Salt – 1 tbsp
Water – 5 cup
FOR PULAO
Basmati rice soaks for 15 min – 1 kg
Onion – 2 (sliced)
Ginger garlic paste – 2 tbsp
Cardamoms – 4
Cloves- 5
Cumin seeds – 1 tsp
Black peppercorn – 6-7
Bay leaf – 2
Nutmeg – ¼
Plain yogurt – 1 cup
Mint leaves – 1/2 cup
Green chilli – 6-7
Yakhni broth – 5 cup
Salt – 1 tbsp
Onions – 2 tbsp (fried)
Oil – ½ cup
Ghee – 2 tbsp
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up
Add oil to the inner cooking pot and let it heat a bit. Add cardamom, cinnamon sticks, black pepper corn, bay leaves and sauté for few seconds.
Next add black cardamom, star anise, cumin seeds, coriander seeds and sauté for 2 mins. Add in ginger, cloves, onion and sauté until the onion turns pink.
Then add potato, chicken pieces and sauté well for 5 mins. Add salt, water and mix well. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Chicken’ pre-set menu button in the ROBOCOOK and select Medium. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 20 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Now TWIST and Open the cooker. Transfer the chicken pieces to a separate bowl and set aside. Strain out the yakhni broth to a cup to use it for later.
Clean the pot and press sauté. Add oil to the inner cooking pot and let it heat a bit. Add cardamom, cloves, cumin, black peppercorn, bay leaf and sauté for few secs.
Then add onion and sauté until it turns brown. Add ginger garlic paste and sauté for 2 min. Add the chicken pieces, potato, nutmeg, curd and mix well.
Now add green chilies, reserved yakhni broth, salt and give it a stir. Wait for 1 boil. Add basmati rice, fried onions, mint leaves and stir well. Add required water. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Pulao’ pre-set menu button in the ROBOCOOK and select Medium. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking.

Once done switch to Keep warm or Off mode. Garnish it with coriander leaves.
Chicken Yakhni Pulav is ready to serve with Raitha.
