Christmas Plumcakes

Maida – 250g
Sugar – 250 g
Butter( room temperature) – 250g
Vanilla essence – 1 tsp
Eggs – 4
Caramel syrup – ½ cup
Soaked dried fruits and nuts in fruit juice or rum – 500g
Baking powder –1tsp
Salt – ½ tsp
Nutmeg powder – a pinch
Cinnamon powder – ½ tsp
Cardamom powder – ½ tsp
Water – 5 cups
Baking equipment – 5 inch Baking tray/ spray brush/Butter paper
We start by sifting two times the ingredients : Maida, Salt, baking powder, Nutmeg powder, cinnamon powder, Cardamom powder in one container.
In a seperate containter mix the Butter and sugar. Then add eggs one by one and beat well this mixture. Now add the sifted dry ingredients into this mixture.
Next mix in the caramel syrup for color and vanilla essence for flavour. Using a spatula mix the soaked fruits into the mixed batter.
Seperately line a 5 inch baking tray with butter paper and brush it with butter .
Now pour the mixture into the Baking tray such that we fill it half.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Now pour 5 cups of water into the Cooking pot and continue in Saute mode till the water gets warm.
Now keep this baking tray on a small steel ring or a vessel inside the robo cook so that the heat is not direct on to the baking tray.
Choose Dal mode in the Menu option and Taste option as Strong.
Close the Robocook. Keep the Presssure Nozzle in the Open position while cooking.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Open the Cooker and remove the Cake. Now allow it to cool to room temperature for about 30 minutes.
Revive the Holiday spirit with this Plum cake. A warm Hot chocolate will make it a filling dessert.
