Ingredients
Poha (use thick poha) – 1.5 cups
Capsicum chopped – 1 small
Paneer chopped – 1/2 cup
Sweet corn boiled – 1/2 cup
Turmeric powder – 1/4 tbsp
Mustard seeds – 1/2 tbsp
Cumin seeds – 1/2 tbsp
Raw peanuts – 2 tbsp
Onion chopped – 1 small
Green chili chopped – 4
Curry leaves – 10-12
Sugar (optional) – 1/4 tbsp
Salt to taste
Oil for fry – 2 tbsp
Chopped coriander leaves – 1 tbsp
Lemon juice of – 1/2
Sev / coconut to garnish – 2 tbsp
Steps
- To a strainer, add flattened rice (poha). Rinse it under running water until it turns soft. To check if it's done, press a flake between your thumb and index finger, it should break easily.
- Next add 1/2 teaspoon salt to the poha and toss to combine. Set it aside.
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up
- Add oil to the inner cooking pot and let it heat a bit. Once the oil is hot, add the mustard seeds and let them pop.
- Then add cumin seeds, peanuts and saute for a minute or two until they start turning brown.
- Next add chopped onion, green chili, curry leaves and saute for 2 minutes until the onions turn soft.
- Now add in capsicum, corn, paneer cubes, turmeric powder and continue to saute for another 4 min. Add in rinsed poha and toss to combine.
- Taste some poha, if it feels dry sprinkle little water all over and add sugar. Mix well and cook for 1-2 minutes. Press cancel to stop saute.
- Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
- Press the ‘Rice’ pre-set menu button in the ROBOCOOK and select Quick. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
- After Pre-Cooking is done the cooking countdown will appear and starts down from 10 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
- Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods
- Now TWIST and Open the cooker. Switch to Keep warm or Off mode. Give a quick stir and squeeze in some fresh lemon juice.
- Garnish with fresh coriander leaves and serve.
