Ingredients:
Cucumber peeled and cut into pieces - 3 large
Ginger garlic – 2 tbsp
Black peppercorns – 5
Dried red chilies - 2-3
Roasted peanuts - 1/4 cup
Cumin seeds- 1 tsp
Mustard seeds – 1/2 tsp
Onions chopped – 2
Tomato paste – 1/2 cup
Turmeric powder - 1/4 tsp
Cumin powder - 1/2 tsp
Red chili powder - 1/4 tsp
Coconut milk - 2 tsp
Coriander leaves – 2 tbsp
Oil – 3 tbsp
Salt – 1 tsp
Steps:
- Take a mixer grinder and grind ginger, garlic, black peppercorns, dried red chilies, peanuts with a little water to a paste and keep aside.
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
- Add oil to the inner cooking pot and let it heat a bit. Add mustard seeds, cumin seeds and let it splitter.
- Next add onion and sauté for 2 min. Add tomato paste and continue to sauté for 2 more min.
- Now add cucumber along with turmeric powder, cumin powder, red chili powder, salt and sauté for 2-3 minutes. Then add the peanut paste, coconut milk, water and stir until they combine well. Press cancel to stop sauté.
- Place the closing lid over the top. Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
- Press the ‘Sambar/ gravy’ pre-set menu button in the ROBOCOOK and select Medium. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking.
- After Pre-Cooking is done the cooking countdown will appear and starts down from 8 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
- Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
- Now TWIST and Open the cooker. Switch to Keep warm or Off mode.
- Stir well and transfer the curry to a bowl. Garnish with chopped coriander leaves.
- Cucumber Curry is ready to serve with Rice/Roti
