Meat (minced) – 1/2 kg
For Grinding
Raw papaya– 100 grm
Ginger garlic– 2 tbsp (chopped)
Cloves – 2
Black cardamoms – 2
Poppy seeds (dry ground)– 2 tsp (roasted)
Peppercorns – 4
Cinnamon pieces – 1/2 tsp
Desiccated coconut– 2 tbsp (roasted)
Blades mace – 2
Green cardamoms – 5
Chilli powder – 1 tsp
Nutmeg, grated – 1/4 tsp
Salt – 1 tsp
For the kebabs
Onions (fried brown and crisp in 1/2 cup ghee)– 1 cup (sliced)
Coriander leaves– 1/4 cup (finely chopped)
Green chillies– 1 tbsp (finely chopped)
Gram flour– 5 tbsp (roasted)
Egg – 1
Ghee – 5 tbsp
