Indian Mulligatawny Soup

Ghee - 3 tsp
Bay Leaf – 1 big
Ginger Garlic paste – 2 tsp
Black Cardamom – 1
Cloves – 2
Onion – 1 big chopped
Carrots – 2 chopped
Tomatoes – 3 medium size
Apple – 1 Medium size (peeled and cut into small pieces)
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Cinnamon powder- 1/2 tsp
Chilly flakes – 1/2 tsp
Turmeric powder – 1 tsp
Cardamom powder- 1 tsp
Pepper powder – 1tbsp
Red Lentils – 1/2 cup
Coconut milk – 1/4 cup
Coriander leaves - for garnishing; chopped
Cashew nuts – 4 chopped for garnishing
Water – 1 cup
Salt to taste
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add Ghee to the inner cooking pot and wait for few sec to get heated. Now add Bay leaf & the Ginger Garlic paste and stir for 1 minute. Add the Black Cardamom and Cloves
Add Onion, Tomatoes, Carrots and the Apple and stir for about 1 minute.
Add the Cumin powder, Coriander powder, Cinammon powder, Turmeric powder, Pepper powder, Chilly flakes,Cardamom powder & Salt & stir for 2 minutes.
Add 1/2 cup of the Red Lentils and water as required (water should cover all the ingredients comfortably)
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Choose the Sambhar mode with the Medium option & increase the time to 10 minutes.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Open the cooker and switch to Sauté mode. Use a hand blender and blend the soup.
Add Coconut milk and Coriander leaves for garnishing and stir the soup well for 3-5 minutes.
Enjoy this very homely Mulligatawny Soup either alone or with Toasted Bread & Pappad
You can add more water and saute for 2 minutes in case you want the soup to become thinner.
Alternately, you can add some Corn flour with water to thicken the soup.
