Onion – 1
Potatoes – 3
Butter – 3 tbsp
Vegetable stock – 4 cups
Cream – 1/2 cup
Black pepper powder – 1 tsp
Salt – 1 tsp
Peel and dice the onion and potatoes.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up
Add butter to the inner cooking pot and allow it to melt. Add the onion and sauté until it turns translucent.
Next add the potatoes and toss well with the onion and melted butter. Cover cook the vegetables for 10 minutes, stir occasionally.
Add veg stock, salt and cook for 20 minutes or until the potatoes turns mushy.
Press Cancel to stop sauté. Now transfer the soup to a bowl and allow it to cool. Once done purée the soup using a hand held blender.
Press sauté option. Add the pureed soup, cream and mix them together. Open cook for 2 min.
Finally sprinkle a dash of black pepper powder. Switch to Keep Warm or Off Mode.
Hot and creamy Irish Potato soup is ready to serve!
