Kokum - 8
Water- 2 cup
Oil – 2 tsp
Cumin seeds -1tsp
Leaves - 10
Garlic – 3 cloves (finely chopped)
Green chilli - 2 (finely chopped)
Coconut milk – 2 cup (thick)
Salt- to taste
Pepper – ¼ tsp (Crushed)
Coriander leaves - few(finely chopped)
In a bowl soak kokam in hot water for atleast 30 minutes. Later, squeeze the juice from kokam and keep aside.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up
Add oil to the inner cooking pot and let it heat a bit. Add cumin seeds, curry leaves, garlic, green chilli and saute well. Now add squeezed kokam juice discarding the pulp. Get kokam juice to a boil.
Further add coconut milk. Make sure now you chance to low coconut milk might curdle. Stir well and add salt. Allow to boil and give it a good stir.
Cook the curry for a minute or two. Then add chopped coriander leaves, crushed pepper to enhance the flavour. However pepper is optional. Switch off the Robocook.
Finally, serve sol kadi / kokum curry with plain rice or drink it plain.
