Par boiled rice or idly rice - 1 cup
Whole skinned urad dal - 1/4 cup
Fenugreek seeds - 1 tsp
Shallots or 1 medium onion - 2 cups (finely chopped)
Ginger - 1-inch piece (grated)
Coriander leaves - ½ cup (finely chopped)
Mint leaves - ½ cup (finely chopped)
Curry leaves - 2 sprigs (chopped)
Cabbage - ½ cup (finely chopped)
Capsicum - ½ cup (finely chopped)
Beans - ½ cup (finely chopped)
Carrot - ½ cup (grated)
Oil - 2 tsp
Mustard seeds- 1 tsp
Urad dal - 2 tsp
Bengal gram dal - 2 tsp
Peppercorns - 1 tsp (crushed)
Cumin seeds – 1 tsp (crushed)
Asafoetida - a generous pinch
Oil/ ghee - as required
Salt- to taste
