Malaysian Laksa Curry Soup

For Laksa soup :
Veg stock – 2 cup
Lemon juice – 1 tbsp
Coconut milk – 1 cup
Sugar – 1tsp
Salt – 1 tsp
Tofu – 1/2 cup
Rice noodles – 1 /2 cup cooked
Spring onion – 2 tsp Chopped
For Laksa paste :
Dry whole red chilli – 5
Ginger garlic chopped – 2 tsp
Lime – 1 (juice)
Cashew – 6-8
Chilli paste – 1 tsp
Onions – 1
Oil – 2 tsp
Add soaked chillies, ginger garlic, cashew, chilli paste, onions, lime juice(half) to a mixer and grind them to a smooth paste. Keep aside.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to the inner cooking pot and let it heat a bit. Add tofu and shallow fry for 2 min Tranfer the tofu to a plate and keep aside.
Next add the ground paste and saute for few mins. Now add the fried tofu and sauté for a minute.
Add in vegetable stock, coconut milk, sugar, lemon juice, salt one by one. Mix well and open cook for 4-5 min. Stir occasionally.
Finally add rice noodles and garnish with lime and spring onion. Give a quick stir. Switch to Keep Warm or off mode.
Hot Malaysian Laksa soup is ready to serve.
