Moroccon Cauliflower and Almond Soup

Olive Oil – 4 tbsp.
Butter – 2 tbsp
Onion – 1 big chopped
Carrots – 2 medium peeled and cut into small pieces
Cauliflower- 12 florets
Almonds – 14 powdered
Garlic – 4 peeled and crushed
Cumin powder – 2 tsp
Coriander powder – 1 tbsp
Coriander leaves – 1/4 cup
Cinnamon powder- 1 tbsp
Pepper powder – 1 tsp
Chilly powder- 1 tsp
Tomato – 1 chopped
Salt to taste
Water – 2 and half cups
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add 1 and 1/2 cups of water into the cooking pot. Then add the Cauliflower florets and pinch of salt. Give it a stir.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Select Sambhar option from the Menu with Taste as Quick.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Remove the cooked Cauliflower & keep it aside. Discard the water.Wash the inner cooking pot and keep it inside Robocook. Then switch to the Saute mode.
Add Olive oil and butter. Then add Garlic, Onions & saute for 2 minutes. Then add Carrots, Tomatoes and Coriander leaves. Stir and let it saute for a minute. Finally add the cooked Cauliflower.
Now add Salt, Coriander powder, Pepper powder, Cumin powder, powdered Almond, Cinnamon powder and Chilly powder. Give it a good stir. Let it continue in Saute mode for 2 minutes till you see the vegetables blend in the spices. Add 1 cup of water.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Close the cooker and select the Manual option from the Menu with Taste as Quick & set timer to 6 minutes.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.

Cool the cooked contents. Add 1/2 cup water ( or more as per your required consistency).
Then move them into a mixer blender for blending or use a hand blender and blend the contents.
Then continue in the Saute mode for about 1-2 minutes. You will see the soup's texture improve. Finally add Coriander leaves for garnishing and stir.
