Ingredients
Quinoa - 1 cup
Peas – 1 cup
Mixed Veg (carrots, beans, peas, corn) – 1 Cup
Red Onion (thinly sliced medium sized) – ½ Cup
Tomato puree – 1 Cup
Ginger Garlic Paste – 1 Tbsp
Turmeric powder - 1/4 tsp
Biryani masala or garam masala - 1 tsp
Chilli powder – 1 tsp
Coconut milk / vegetable stock / water - 1 cup
Cumin seeds - 1/2 tsp
Cloves – 2
Bay leaf – 1
Cardamom - 1
Cinnamon (small piece) - 1
Salt - to taste
Oil / ghee – 1 tbsp
fresh mint leaves – ¼ cup
Steps
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
- Add oil to the pot and let it heat a bit. Add cloves, cumin seeds, bay leaf, cinnamon, cardamom and let the spices roast for few seconds.
- Add the chopped onions and saute until translucent. Add the ginger garlic paste and saute until the raw smell goes away. Keep stirring it to avoid burn.
- Add the tomato puree and cook it until the tomato is reduced and you see some oil in the sides. (Do not skip this step or you’ll end up with mushy quinoa)
- Now add Peas, mixed veggies, quinoa, turmeric powder, chilli powder, salt, garam masala or biryani powder and mix well.
- Now add the coconut milk (thin coconut milk) or water or stock whichever you prefer & extra 1 1/2 cup water. Add mint leaves and stir well. Press cancel to stop saute.
- Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
- Press the ‘Manual’ pre-set menu button in the ROBOCOOK and select Medium with 6 min timer. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
- After Pre-Cooking is done the cooking countdown will appear and starts down from 8 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
- Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods
- Now TWIST and Open the cooker. Switch to Keep warm or Off mode. Let your Quinoa Peas Biryani rest for a bit and fluff up with a fork.
- Serve hot with raita or papad.
