Thai Style Pumpkin Soup

Olive Oil – 3 tsp.
Onion – 1 big chopped
Potato – 1 small sized; peeled and chopped
Pumpkin – 6 pieces cut
Red Capsicum – 1/2 de-seeded & cut into small pieces
Red Lentils – 1/2 cup
Coconut milk – 1 cup (1/2 cup coconut milk diluted with 1/2 cup water)
Ginger – 1/2 inch
Garlic – 4 peeled and crushed
Coriander powder – 1 tsp
Cheese slice – 1/2
Carrot – 2 peeled and cut into pieces
Oregano – 1 tbsp.
Pepper powder- 2 tsp.
Basil leaves – 11/2 tsp.
Italian Herb mix- 1 tsp
Coriander leaves - for garnishing; chopped
Corn Flour- 1/2 tsp
Water – 1/4 cup
Salt to taste
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Wash the Red Lentils and keep aside.Add 3 Tbsp Olive oil to the inner cooking pot and wait for few sec to get heated. Now add Onion, Garlic and Ginger and stir for a minute. Add Salt. Then add Potato, Capsicum, Carrots and Pumpkin and stir.
Next add Coriander powder, Oregano, Pepper powder, Basil leaves and Herb mix. Give it a good stir and continue in the saute mode for about 5 minutes.
Once you see the vegetables cook, add washed Red Lentils and stir. Then add Coconut milk. Now add water so that it covers the vegetables in the cooking pot.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Choose the Sambhar mode with taste option as medium. Increase the timer to 10 minutes manually.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Remove the cooked contents and transfer to a seperate container and let it cool down. Then use a mixer jar or alternatly use a hand blender for blending.
Press The Saute' Button in the cooker. Add the blended soup contents, diluted corn flour and cheese slice and stir the soup for a minute. Then continue in the Saute mode for about 2-3 minutes.
You will see the soup thickening in consistency.Finally add Coriander leaves for garnishing and stir.
