Aubergine or Egg Plant quartered - 1
Tur dal - 1/2 cup
Tomatoes quartered - 3
Green chilies, slit - 2
Red chili powder - 1 tsp
Turmeric powder - 1/2 tsp
Tamarind - 1 small marble size
Mustard seeds - 1/2 tsp
Whole dry red chilies - 2
Garlic crushed - 6 to 8 no’s
Oil - 1 tsp
Water – 1&1/2 cups
Salt - to taste
Serve Vankaya Bhajji mixed with hot rice and a dash of ghee.
