Ingredients
For Kolhapuri Masala
White sesame seeds - 1 tsp -
Poppy seeds (khus khus) - ½ tsp
Desiccated coconut- 2 tbsp
Whole black pepper - 4 to 5
Coriander seeds - 1 tsp
Cumin seeds - ½ tsp
Cinnamon (dalchini) - 1 inch
Cloves - 2
Fenugreek seeds – ¼ tsp
Nutmeg (grated) - 1 pinch
Stone flower - 1 (optional)
Green cardamom - 1
Kashmiri red chilies - 3
Indian bay leaf – 1
Other ingredients for veg kolhapuri
Potato – 1 Cup
French beans - ¼ cup
Cauliflower florets - ⅓ cup (chopped)
Green peas - ⅓ cup
Carrots (cut into sticks) - ⅓ cup
Sliced bell pepper - ⅓ cup
Tomatoes (finely chopped) 0 ¼ cup
Onions - ½ cup finely chopped
Ginger garlic paste – 1 tsp
Red chilli powder - ½ tsp
Turmeric powder - ¼ tsp
Asafoetida (hing) - 1 pinch
Water - 275 ml water
Oil – 2tsp
Coriander leaves - for garnishing
Salt - as required
Steps
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Add 2 cups of water to the pot. Add Potato, French beans, cauliflower florets, green peas and carrots.
- Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
- Press the ‘Manual’ pre-set menu button in the ROBOCOOK and select Medium with 8 min timer. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
- After Pre-Cooking is done the cooking countdown will appear and starts down from 8 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
- Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods
- Now TWIST and Open the cooker. Transfer it to a bowl.
- Clean the pot and press saute mode. Add one tsp of oil and let it heat a bit. Add cinnamon, cloves, black peppers, coriander, cumin, stone flower, pinch of nutmeg powder, red chilies, green cardamoms, black cardamom seeds, and other ingrediants.
- Once the spices become fragrant then add poppy seeds, sesame seeds and desiccated coconut. Stir continuously and dry roast till the desiccated coconut gets golden.
- Switch Off The Robocook. Once the spice mixture cools, then take them in a dry grinder or coffee grinder. Grind to a fine powder.
- Making Veg Kolhapuri
- Clean the pot and press saute mode. Add oil, chopped onions. Saute the onions till they are light golden or golden. Add ginger garlic paste, chopped coriander leaves.
- Stir and saute till the raw aroma of the ginger garlic goes away. Next add chopped tomatoes. Saute till the tomatoes soften and you see oil leaving the sides. Keep stirring throughout the cooking process.
- Add turmeric powder, red chili powder and asafoetida. Stir and then add chopped bell pepper/capsicum. Saute 5 to 6 minutes on a low flame. Add the ground kolhapuri masala and saute well.
- Then add water. Season with salt. Bring the curry to a simmer. When you see some oil floating on top, add the steamed veggies.
- Stir the gravy for about 2 minutes. Lastly add chopped coriander leaves and give a final stir. Switch Off the Robocook Pot.
- Serve veg kolhapuri with Soft Chapatis, Phulkas Or Parathas.
