Ingredients
Basmati Rice - 1 cup
Onion, chopped - 2 nos
Tomato, chopped - 1 no
Green chillies, slit - 2 nos
Coriander leaves - 1/2 handful
Mint - 1 handful
Ginger garlic paste - 2 tsp
Fresh curd or yogurt - 3 to 4 tsp
Red chilli powder - 1 tsp
Garam masala powder - 1 tsp
Cardamom - 1
Cloves - 2
Cinnamon - 1 inch piece
Star Anise - 1
Bay leaf - 1
Black stone flower or Kalpaasi - 1 big pinch
Water - 2 cups
Salt - to taste
Ghee or oil - 2 tsp
Steps
Wash basmati rice and soak for 15 mins.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil or ghee to the inner cooking pot and let it warm a bit. Add Cardamom, Cloves, Cinnamon, Star Anise, Bay leaf, Black stone flower or Kalpaasi and saute till the raw smell go from the spices.
Now add onion, tomato, green chillies, ginger garlic paste, coriander leaves, mint leaves and saute for a min. Add whisked curd, red chilli powder, garam masala powder and stir well.
Drain the water from basmati rice and add it along with water, salt. Give it a good stir. Press the ‘Cancel’ button to stop ‘Saute’ mode.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press ‘Manual’ pre-set menu button in the ROBOCOOK and set timer for 4 mins. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 4 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods
Now TWIST and Open the cooker. Switch to Keep warm or Off mode. Gently fluff the rice with a fork and garnish with fried onions or cashews.
Serve Kuska Biryani with onion curd raita or any gravy of your choice.
