Gobhi Tikka Masala

Ingredients
Oil - 1 tbsp
Medium onion, diced - 1
Cloves of garlic, minced -3
Grated ginger 1 tbsp -
Dried fenugreek leaves - 2 tsp
Garam masala - 2 tsp
Turmeric - 1 tsp
Ground chili - 1/2 tsp
Ground cumin - 1/4 tsp
Salt - 1/2 tsp
Diced tomatoes with their juice - 3 cups
Maple syrup - 1 tbsp
1 small cauliflower head - 4 cups florets
Yogurt (or cashew cream) - 1/2 cup
Optional toppings: fresh parsley, roasted cashews
Add oil to the inner cooking pot and let it warm a bit. Once hot, add the onion, garlic, ginger and saute for 3-4 minutes, or until the onions start to caramelize and become soft.
Add the dried fenugreek leaves, garam masala, turmeric, chili, cumin, salt and continue to saute for another 2 minutes, stirring regularly to make sure it doesn’t burn.
Add 2 tsp of water and scrape the bottom to make sure nothing is sticking to it. Now add the crushed tomatoes, maple syrup, and cauliflower florets and saute well.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Manual’ pre-set menu button in the ROBOCOOK with medium option and set 8 minutes time. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 8 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods
Now TWIST and Open the cooker. Switch to Keep warm or Off mode. Give a quick stir.
Serve hot with rice, naan, or tofu, and top with fresh parsley and roasted cashews.
