Chicken Chipotle Rice

Vegetable oil - 2 tsp
Boneless, skinless chicken thighs - 8
Medium red onion– 1(thinly sliced lengthwise)
Garlic cloves– 3(coarsely chopped)
Ground cumin - 1/2 tsp
Canned chipotle chillies in adobo - 2 (minced)
Large tomatoes– 2(diced)
Chillies - 2
Long-grain white rice - 1 cup
Chopped cilantro leaves (optional) - for serving.
Salt -1 tsp
Pepper - 1/8 tsp
Lime wedges - for serving.
Season chicken on both sides with salt and pepper.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the‘Sauté' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to inner cooking pot and let it heat a bit. Add the chicken pieces and fry until chicken turns brownon both sides. Once done, transfer to a plate.
Remove excess oil. Nowadd onion and sauté until it turns golden in colour. Add garlic, cumin,chillies, and continue to sauté for 2 mins.
Next add tomatoes, salt, and cook until tomatoes begin to break down and release their juices.Then add minced chipotle chillies, water, and stir well.
Now add fried chicken & give it a good mix. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Chicken’ pre-set menu button in the ROBOCOOK and select Strong. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 30 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
