Kolhapuri Soya Curry

Soya Chunks - 200 gms (soaked in hot water & squeezed)
Onion – 4 Nos (chopped)
Garlic – 8 cloves (crushed)
Ginger – 1 Inch (crushed)
Tomato - 3 Nos (chopped & made to puree)
Kashmiri Chilli powder – 1 Tbsp
Red chilli powder – 1 Tsp
Turmeric powder – 1 Tsp
Dhaniya powder – 1 Tbsp
Garam Masala powder – 1 Tbsp
Cooking Oil – 50 gms
Coriander leaves – few (chopped)
Lemon Juice – ½ Lemon
Salt – to taste
Cumin Seeds - 1 Tbsp
Cinnamon – 1 inch
Star Anise – 2 Nos
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to the inner cooking pot and let it heat a bit. Add onions and sauté till it turns golden brown in colour. Press cancel to stop sauté. Transfer the onions to a blender and once cooled, grind to a fine paste. Set aside.
Press sauté option. Add cinnamon, star anise, cumin seeds and sauté for few secs. Next add the crushed ginger, garlic and sauté till the raw smell goes.
Now add the ground onion paste, tomato puree and give a good mix.
Then add turmeric, kashmiri chilli, red chilli, dhania, garam masala powders one by one and sauté till the masalas get combined.
Later add soya chunks and mix well. Sprinkle some water. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Manual’ pre-set menu button in the ROBOCOOK and set timer for 5 mins. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 5 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Now TWIST and Open the cooker. Press sauté option. Add lemon juice and mix well. Switch to Keep warm or Off mode. Garnish with coriander leaves.
Hot Kolhapuri Soya curry is ready to serve with rice/roti.
