Shrimp corn & lemon grass soup

Fresh lime juice - 2 tsp
Corn kernels - 50gm
Spring onion - 5gm
Corn starch – 3 tsp
Lime leaves – 6 (cut in quarters)
Green onions - 3 tbsp (thinly sliced)
Fish sauce - 1 tbsp
Chilli paste – 2 tbsp (roasted)
Fresh lemongrass - 3 stalks
Low-sodium chicken broth - 2 cups
Water - 2 cups
Ginger - 5 quarter-size (sliced)
Raw shrimp - 1/2 pound (peeled & deveined)
Button mushrooms - 1 cup (thinly sliced)
Fresh cilantro leaves - 1/3 cup (coarsely chopped)
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to the inner cooking pot and let it heat a bit. Add green onions and sauté until they turn pink. Add ginger and sauté until the raw smell goes.
Next add corn kernels and sauté for few secs. Further add button mushrooms and sauté till they turn soft.
Later add in fresh lime juice, corn starch, lime leaves, fish sauce, chilli paste, lemon grass, spring onion, chicken broth one by one and stir gently for few mins.
Add raw shrimps, water and mix well. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Manual’ pre-set menu button in the ROBOCOOK and select Medium. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 10 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Now TWIST and Open the cooker. Press sauté option. Add sugar, crushed black pepper and give a quick stir. Switch to Keep warm or Off mode. Finally garnish with chopped cilantro.
Serve hot Shrimp corn lemon grass soup with breadsticks.
