Ingredients:
Basmati Rice - 1+1/2 cups
Fresh mint leaves - 1 bunch
Fresh Coriander leaves - 1/2 bunch
Grated coconut - 1/4 cup
Green chilies - 5
Ginger - 1-inch piece
Garlic pods - 6
Fennel seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Cinnamon - 1/4 inch stick
Cloves - 3
Star anise - 1
Kal paasi or black stone flower - 1 pinch
Bay leaf - 1
Red chili powder - 1/2 tsp
Lemon juice - 1 tsp
Turmeric powder - 1/2 tsp
Salt - to taste
Oil - 2 tsp
Steps:
- Wash the Basmati Rice and soak it for 30 minutes.
- In a mixer, jar adds grated coconut, fennel seeds, cumin seeds, ginger, garlic, cinnamon, cloves, mint leaves, and coriander leaves. Grind it to a smooth paste using little water. (1/8 cup approx)
- Connect the power cord to ROBOCOOK and switch the ‘ON’ button. Press the Sauté́ Button in the front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
- Add oil to the inner cooking pot and let it heat a bit. Add star anise, Kal paasi, bay leaf, and saute for few secs. Then add the ground paste and saute well.
- Now add red chili powder and cook for 1 min. Drain the basmati rice completely and add it to the inner pot. Add 2 cups water, salt, lemon juice, turmeric powder and mix well.
- Place the closing lid over the top, Turn and place the Pointer in the ‘Close’ Position. Ensure the lid is firmly closed and the Pressure release button should be in ‘DOWN’ Position.
- Press the ‘Manual’ menu button in the ROBOCOOK and select ‘Medium’. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking for 6 mins.
- After Pre-Cooking is done the cooking countdown will appear and starts down from 6 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
- Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the Steps
- Now TWIST and Open the cooker. Switch to Keep warm or Off mode. Fluff with a fork gently.
- Enjoy flavourful mint rice with papad or raita
