Ingredients:
For cooking
Spinach/ palak – 1 bunch
Ginger garlic– 2 tbsp (chopped)
Green chilli – 4
Onion– 1 (chopped)
Garlic – 4 cloves
Bay leaf – 1
Cinnamon – 1 inch
Cumin seeds – 1 tsp
Kasuri methi – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Red chilli powder – 1 tsp
Gram flour (besan) – 1 tsp
Salt – 1 tsp
Butter- 2 tsp
Lemon juice – 1 tsp
Water- as required
For tadka
Garlic – 2 tbsp (sliced)
Dry red chilli – 1
Ghee – 2 tbsp
Kasuri methi – 1/2 tsp
Steps:
- Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the manual Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
- Add 2 cups of water to the inner cooking pot and let it heat a bit. Once done add palak and allow boiling for 2 minutes or until palak blanches well. Press cancel.
- Drain off the palak and drop into ice-cold water. This helps to retain the green color of palak.
- Transfer the blanched palak into the blender along with ginger garlic, green chilies and blend to smooth puree without adding any water. Keep aside.
- Clean the pot and press sauté mode. Add butter to the inner cooking pot. Sauté bay leaf, cinnamon, cumin seeds and kasuri methi until it turns aromatic.
- Next add onion and sauté until the colour changes to pink colour. Add besan and continue to sauté until besan turns aromatic.
- Add coriander powder, red chili powder, garam masala, salt and mix until the masalas gets combined.
- Then add palak puree and sauté for 1 min. Add ½ cup water and sauté well adjusting the consistency as required. Open cook for 3 minutes or until flavours are absorbed well.
- Further add in lemon juice. Mix well and press cancel. Remove lahsuni palak from cooking pot and clean the pot for tadka.
- Press sauté mode. Add ghee, garlic to the inner cooking pot and sauté until it turns golden brown. Add dried red chili, kasuri methi and continue to sauté for few minutes.
- Finally, pour tempering over lasooni palak and stir well. Switch to “keep warm or off” mode.
- Healthy Lahsuni Palak is ready to serve with Makke ki roti
