Autumn wild rice soup

Vegetable stock - 6 cups
Uncooked wild rice - 1 cup
Mushrooms – 100 gm (sliced)
Garlic - 4 cloves (minced)
Carrots - 2 medium (diced)
Celery - 2 ribs (diced)
Sweet potato - 1 large about 1 pound (peeled and diced)
White onion -1 small (peeled and diced)
Bay leaf - 1
Old Bay seasoning - 1 1/2 tsp
Coconut milk - unsweetened (14-ounce)
Large handfuls of kale - 2 roughly chopped with thick stems removed
Black pepper – freshly cracked
Fine sea salt -as required
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The 'Sauté' Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to the inner cooking pot and let it heat a bit. Add bay leaf, onion and sauté for few seconds. Next add vegetable stock and allow it to boil. Then add wild rice, mushrooms, garlic, carrots, celery, sweet potato and mix well. Add old Bay seasoning. Stir to combine. Press cancel to stop sauté.
Place the closing lid over the top, Turn and place the Pointer in ‘CLOSE’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Press the ‘Sambar/Gravy pre-set menu button in the ROBOCOOK and select Strong. PIC TECHNOLOGY pre-sets temperature/pressure/timer for pre-cooking
After Pre-Cooking is done the cooking countdown will appear and starts down from 15 mins. Once the countdown comes down and cooking is completed it stops with 3 Beep sound and automatically switches to KEEP WARM mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Now TWIST and Open the cooker. Discard the bay leaf.
Press sauté and add the coconut milk, kale to the soup. Stir gently until combined.
Taste and season with salt and pepper (plus any extra Old Bay seasoning, if you would like) as needed.
Switch to ‘keep OFF or WARM ‘mode.
Autumn Wild Rice soup is ready to serve hot.
