Creamy Sweet Corn Soup

Butter – 6 tbsp
Olive Oil – 3 tbsp.
Bay Leaf – 1 big
Milk– 11/4 cup
Onion – 1 big chopped
Carrots – 2 small peeled and chopped
Garlic – 6 peeled & crushed
Potato – 2 medium sized, peeled and chopped
Sweet Corn – 1 big (1/3 of the same to be sauted in butter and rest used for cooking)
Oregano – 1 tbsp.
Pepper powder- 2 tsp.
Basil leaves – 11/2 tsp.
Chilly flakes – 1/2 tsp.
Italian Herb mix- 1 tbsp
Coriander leaves - for garnishing, chopped
Corn Flour- 1 tbsp
Milk – 1/2 cup
Water – 2/3 cup
Salt to taste
Desilk the Sweet Corn Cob. Then separate the corn kernels. Keep 1/3 of the kernels aside for saute and the remaining for cooking in the soup.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add 3 Tbsp Butter to the inner cooking pot and wait for few sec to get heated. Now add 1/3 of the separated Corn kernels and saute. Add 1/2 tsp Chilly powder, pinch of Oregano and Basil leaves and saute till the kernels are crisp. Keep them aside.
Next add 3 tbsp Butter add Olive oil to the inner cooking pot. Now add Bay leaf, crushed garlic, onions and stir for 2-3 minutes till you see the Onions and garlic slightly cooked.
Add Peeled potato, carrots and the remaining corn kernels and saute for about 2 minutes. Add Salt, Oregano, pepper powder, Basil leaves, mixed herbs and stir for about a minute till you see the spices blend with the vegetables.
Add water so that it covers the vegetables in the cooking pot.
Place the closing lid over the top, Turn and place the Pointer in ‘Close’ Position. Ensure the lid is firmly closed and Pressure release button should be on ‘DOWN’ Position.
Choose the Sambhar mode with taste option as medium.
Pre-Cooking will happen for few seconds and once the cooking is completed 3 Beep sounds will be heard and it will automatically switches to keep warm mode. Press ‘Cancel’ if not required.
Wait for 10 mins to get Natural Pressure Release (OR) it can be released manually by pulling ‘UP’ the pressure release button. Ensure the pressure is released completely on both the methods.
Discard the Bay leaf. Remove the cooked contents and transfer to a separate container and let it cool down. Then use a mixer jar or alternately use a hand blender for blending.
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press The Saute Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Press The Saute Button and add the blended soup contents, diluted Corn flour and milk and stir the soup for a minute. Then continue in the Saute mode for about 5 minutes. You will see the soup thickening in consistency. Add Chilly flakes, Coriander leaves for garnishing and the sauteed Corn kernels and stir.

You can add more milk and saute for 2 minutes in case you want the soup to become thinner.
Alternately, you can add some Corn flour with water to thicken the soup.
