Ingredients:
Baingan – 4 (chopped)
Onion – 2 (chopped)
Tomato – 3 (chopped)
Roasted peanut powder – 3 tbsp
Ginger garlic paste – 1 tsp
Cumin seeds – 1 tsp
Mustard seeds – 1 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tbsp
Turmeric powder – 1/2 tsp
Sabzi masala – 1 tsp
Dry mango powder – 1/2 tsp
Coriander leaves – 3 tbsp
Salt – 1 tsp
Oil – as required
Steps:
Connect the power cord to ROBOCOOK and switch ‘ON’ button. Press the Sauté́ Button in front dashboard and wait for 30 secs for the inner cooking pot to get heated up.
Add oil to the inner cooking pot and let it heat a bit. Add mustard seeds and let them pop.
Add cumin seeds, onion and sauté for a min. Add ginger garlic paste and continue to sauté until the raw smell goes.
Next add baingan, tomato, salt and cook until the tomatoes turn mushy.
Add red chilli powder, peanut powder, sabzi masala, dry mango powder, coriander powder, turmeric powder one by one and mix well until they combined. Allow it to open cook for 5 mins.
Once done garnish with coriander leaves.
Serve hot Baingan Ki Sabzi with roti.
